Is it Summer Yet?

I only ask, because we ate burgers for dinner & it felt like summer. The smell such a dinner generates is drool inspiring.


While it may not look beautiful, this was my tasty burger creation, alongside some amazing french fries baked in the oven. The burgers were "grilled" on the stovetop in our grill pan by chef extraordinaire Simon.

For work, I took the usual snacks:


If you have never eaten a Larabar, pick one up & look at the ingredients. It's like... three things. :) I just saw a recipe for homemade ones on a blog that I need to get in my life ASAP.

For lunch today, I had something I never tried before:

This is an Amy's Cheese Enchilada with Beans & Corn frozen meal. It was amaaaaazing good. It tasted like actual food. I was in love. :) I paired it with a side salad



Which was also good.

Tomorrow is weigh-in... I don't think it will be great. But I'm going to keep my fingers crossed anyway and have a better week, starting tomorrow! I will wallk with Leslie, go "real" grocery shopping instead of just buying snacks at TJ's, and buy lots & lots of FRUIT and VEGETABLES. I can't tell you how excited I am for summer & awesome produce again. See you later!

Pretzels and Trader Joe's Spinach & Artichoke Dip. Mmmm....

Weekend's Over

In what feels like the blink of an eye, the weekend is over. Saturday evening, my sisters visited.


We munched dinner of Pot Roast with Veggies and Mac & Cheese



snacks


and played games.


We also had a lot of fun playing Dance Central, a new game for XBox Kinect.

On Sunday, two of my friends with kids popped over. We ate pizza, played & chatted. I love them to pieces, but am super glad I am not a mom yet.



This morning, I ate a muffin from TJ's. It was pretty good.

Everything But the Kitchen Sink

is what I ate this evening, pretty much. Chocolate, a piece of cheese, popcorn, clementines, chips... I'm well within my weekly points & still on plan and tracking. But I blame my snack attack on this:

Kind-of-fail dinner.

This was out of the Weight Watchers in 20 Minutes cookbook, which we have had a lot of success with thus far. It was a recipe for Chicken Stir Fry with Cellophane Noodles, and it was no bueno. The chicken & veggies on top were great, but the noodles?

We may have cooked them incorrectly, but Simon followed the directions in the recipe, which differed from the package. At any rate, the noodles were so hard to eat I gave up halfway through my portion. Lesson learned? When you are trying out a bunch of new recipes, you win some & you lose some. Today was a tough loss.

Oh well, tomorrow we are having pot roast - hard to screw that up. :) Hasta manana!

Pizza in the morning

The only problem with ordering pizza is the leftovers. Not that it's a real problem...


Already gone, and very tasty.

At my weigh-in this morning (I weigh in at home), I was down 0.4 pounds. Now, that is not a very big number. But if I lose that much a week for a year, I would be down 20 pounds. And I would rather be down 20 than up 20 because I got depressed & quit WW after a small loss. :) Besides, I definitely think the extra salt from the pizza & popcorn last night came into play re: the weigh-in and that I'll do a lot better next week. I already did three miles with Leslie this morning!

Pizza Pizza

So my mystery lunch was...


Sushi! I had a Brown Rice California Roll. It was delicious.

We intended on making a recipe out of the Weight Watchers in 20 minutes cookbook, but Simon felt miserable after work. So we just got pizza instead:


Mine is a thin crust veggie pizza - delicious. Simon opts for lots of meat & cheese on his pizza, so we can never share.

Later, I had some popcorn that I made in my new hot-air popcorn maker!


My mom & sisters recommending getting one, and I am happy I did, it is a lot cheaper than the microwave kind! I am excited to do some more experimenting with seasoning the popcorn - tonight I just sprayed it with Pam and salt. It was gooooood. ;)

Some Chocolove, and I call it a day.


Tomorrow is weigh-in... definitely nervous about my eats today affecting the results. We shall see. Wish me luck!


Lunch Surprise

Last night, I ended up walking with Leslie for 2 miles! I wasn't scheduled to work out, but I got a new DVD in the mail & needed to give it a test drive.

This morning, I was hankering for Raisin Bran again:


sans banana. :/


For lunch today, I'm getting something at work. These are my day snacks:


I've got PopChips, greek yogurt, and grapes. The Vitamin Water was purchased for .25 with a coupon, otherwise I wouldn't bother.

Plain Jane Eats

Well, I am still at work but out of things to do, so I thought I would check in for the evening. I'm looking forward to heading home & relaxing!

At work earlier today, I bought myself an easy dinner:


I try not to eat too many frozen meals, mostly because they are high in sodium and low in veggies. But on nights like tonight, them are mighty convenient. I forgot to take a picture of this guy before I devoured him, but trust me, he wasn't pretty.

Tomorrow should be a pretty normal day - work, dinner, hanging with the husband - and I have a date with Leslie! :) See you then!

Sleepyhead

I could barely drag myself out of bed this morning, and now I have to go work for 11 hours. Blah. Wednesdays, I work at my main job from 9-3:30. then I work my second job from 4-8. My husband is starting grad school night class on Wednesdays, so he won't be home until 10 or so. So tonight, we are on our own for dinner! I have no idea what I am going to eat. But I already ate breakfast:


Barbara's Cinnamon Puffins and some grapes.

Lunch on Wednesdays becomes kind of a grazefest - I am not at my first job long enough to get a lunch, so I pretty much snack on my bag of foodstuffs all day long. This is great because I am never worried about being starving and I can always last until dinner at 8:30 or 9. This is my bag today:


I have some greek yogurt, a Luna Bar, a yogurt parfait, a fruit cup, clementines, Pop chips, Pretzel M&M's, and my main course - smoked turkey on whole wheat with Muenster, mustard & arugula. I may or may not eat everything I bring on Wednesdays. Sometimes my eyes are bigger than my stomach. Anyway.. off to work, see you tonight!

Magically Delicious

Hey there! Simon & I just got back from my dad's house. When we arrived, the gang was waiting on us to feast, and feast we did.

First we had some tri-color pasta & sauce. Think this much... x2.



Then, Laura (my dad's girlfriend) served up some amaaaahzing garlic bread:

That was the last piece! I ate two and forgot to have them pose.

Finally, we delved into some store bought goodness:

Cinnamon apple cake of some sort from my place of employment. I try to make healthy desserts for dinners at my dad's, but it didn't happen this week. I vow to cook up something special for next week, though!

We talked and laughed and had a great time... but now I am exhausted. Have a good night!

Separate Ways

... is the song I have had in my head since seeing Tron a few days ago, ugh. Today is a typical Tuesday for me - work, come home & head to my dad's for dinner. This is a rest day on exercise for me as well. It's about a 45 minute drive to my dad's, so I get to catch up with Simon about his day in the car, then visit the fam. It's muy bueno!

Breakfast:

Raisin Bran with a banana. It was delicious.

And for lunch:

Leftover linguine with spinach and sausage, a couple of clementines, a kashi bar, and my yogurt from yesterday, which is still at work. Provided that I get to eat it this time. ;)

I'm out of bananas, so later I have to hack this guy up:

Mmmm, Garlic..

So, work was so busy I didn't even get to eat my yogurt as a morning snack. Hmmmph. However, at lunch I did sneak in these guys as dessert:


For dinner, Simon whipped up some arugula and spinach salads garnished with grape tomatoes, bell pepper & a smidge of parmesan cheese


followed by a fantastic recipe from Weight Watchers in 20 Minutes, Fresh Linguine with Spinach and Sausage.

This recipe was super simple. Boil some fresh linguine, saute some garlic and hot Italian turkey sausage, wilt some spinach, throw on some pine nuts and BAM. It's dinnertime. It might not look like much, but it was super tasty & the aroma of garlic was to die for.

I just munched the last of my Chocolove :(


and now I am off to walk with Leslie. We missed our date this morning. ;) Have a good night!

Quick Breakfast Post

I was supposed to wake up early to walk with Leslie again, but I slept right through walking time. It is tough to get back on schedule when you have slept in until ten three or four days in a row. Uggggh. So we'll take our walk after work Some breakfast eats:

Barbara's Fruit Puffins with 1/4 cup of skim milk and a naner.


And my lunch for work:

Leftover Tex-Mex Sloppy Joes, Chobani Strawberry, a couple of clementines, and a Luna Bar.

It should be a pretty rough day. I work at a pharmacy & it's the 1st Monday of the year, so everyone with a new insurance card will be in to tell me all about it. Wish me luck!

Chicken and Noodles

We are finally undecorated from Christmas! As soon as we got back tonight, we stripped down the tree and threw it out back to await its fate on recycling day. A little sweeping, and the living room is as good as new:


Otherwise, the day was a pretty standard grandparent Sunday. We headed to Hamburg, a 1.25 hour drive, around 1:30 and took the scenic route instead of the turnpike for once - 'twas lovely.
We gathered, chatted & ate some grub, which I forgot to photograph prior to digging in:


This was a meal of buttered noodles, broccoli & baked chicken breast. With Weight Watchers, there is some guessing involved with home-cooked meals that you do not prepare yourself. But it isn't too bad as long as you keep portions in check! For example: I ate no more than a cup of noodles, and I estimated on the high side on the size of the chicken breast & amount of butter used.

Everything was delish. I love visiting my grandparents - I get to catch up with them, catch up with my sisters & mother, and get away from my little corner of the world for a few hours.
